Meat Roasting Chart

  Quick roasting 230°C, Gas 8 reducing to 190°C, Gas 5 after 10 minutes Slow roasting at 160°C, Gas 3-4 Meat thermometer temperatures
Beef with bone 15 minutes per 0.5kg plus 15 minutes extra 25 minutes per 0.5kg plus 25 minutes extra Rare - 60°C
Medium 68°-70°
Well done 75°C-77°C
Beef without bone - rolled 20 minutes per 0.5kg plus 20 minutes extra 30 minutes per 0.5kg plus 30 minutes extra
Lamb with bone 20 minutes per 0.5kg plus 20 minutes extra 25 minutes per 0.5kg plus 25 minutes extra 80°C - 82°C
Lamb and Mutton without bone rolled 25 minutes per 0.5kg plus 25 minutes extra 30 minutes per 0.5kg plus 30 minutes extra
Mutton with bone 20-25 minutes per 0.5kg plus 25 minutes extra 25 minutes per 0.5kg plus 25 minutes extra
Pork with bone 25-30 minutes per 0.5kg plus 25 minutes extra 35 minutes per 0.5kg plus 35 minutes extra 85°C - 88°C
Pork without bone rolled 35 minutes per 0.5kg plus 25 minutes extra  
Chicken unstuffed At 160°C 20 minutes per 0.5 kg plus 20 minutes
Chicken stuffed At 200°C, Gas 6 for 20 minutes and then 180°C, Gas 4
