Where our products come from We 'source direct', which means we know a lot about the animals that come to us for processing in the abattoir or ready to prepare for sale. We have close working relationships with all our farmers; our business is inextricably linked with theirs. A combination of farm visits, trust and feedback from our own abattoir helps the relationships work. Beef is sourced directly from local farms - we do not buy any imported or boxed beef. Lamb is sourced directly from local farmers. We have recently launched the High Peak Lamb project supported by DEFRA. Pork is sourced from Midland Pig Producers via the farms at Doveridge, Needwood and Foston. Over the last two years our pig throughput has doubled due to curing our own bacon. We believe we are supplying a superior product that is a proven winner - the farmers will not compromise the quality by feeding cheap by-products that competitors may find more profitable. Each production unit is regularly checked and certificated by independent assessors from the Genesis farm assurance scheme. These assessments ensure that each unit complies with UK legislation, welfare and best method of production standards. In addition the scheme requires that vets inspect and issue an updated report to confirm ongoing compliance at least once every quarter. All the pigs are delivered to our local abattoir, which is strictly monitored to confirm with all hygiene and high welfare considerations. In order to keep travel times and disruption to the animals at an absolute minimum (1 hour travelling time between the farm and our abattoir), only approved haulage companies are permitted to transport pigs in order to complete the continuous chain for traceability. Every aspect of the process from farm to plate is assessed for best practice in welfare, health and hygiene and we pride ourselves in providing our customers with the very best pork products with the highest levels of pure succulence and taste. Chicken is sourced directly through farmers P & R Whitwam, whose chickens we use for dressed and jointed birds. We also buy some boxed chickens in for boning (Frank Bird) and cooking (Frank Bird and Pointers). Turkey is sourced directly from a local farm throughout the year. It is the only nationally recognised organisation to represent the independent meat trader in England and Wales at European, government and industry level.
Member of the Association of Independent Meat Suppliers.AIMS is a new association representing small and medium sized abattoirs. Thie objective is to emphasis the role of the small and medium sized abattoir in serving local livestock farmers and meeting the whole range of consumer needs, including butchers and companies distributing meat and meat products over a much larger geographic area. AIMS provides members with a collective voice so they can be properly and effectively represented to the UK Government and others so their businesses may thrive in the 21st century.
