The farmers who supply Mettrick's with free range pork are: Medium Rare - Free range pigs - Burton (Staffs) - 50 miles from Glossop As the Peak District is not a traditional pig rearing area, we have ventured further into the Midlands to source good pork. We have recently been working with Medium Rare on the size of their outdoor paddocks in which the pigs roam and these are now much bigger following our farm visit. Mettrick's source all their turkey from: David and Shaun Heap - Holmfirth - just 13 miles from Glossop. As with all Mettrick's suppliers, animal welfare is top of the agenda for David and Shaun. All their turkeys are reared on the farm and they have their own abattoir on site. This means that there is no live transport involved and we think this is very important. David's turkeys always draw customer comments for their excellent flavour. He rears both bronze and traditional birds for us and was crucial to us being awarded Britains Best Turkey Butcher.

Mettrick's source free range saddleback pigs to make porcetta from: Taste Tradition - Joyce & Charles - Thirsk (North Yorkshire) - 85 miles from Glossop Mettrick's bone and roll the full side of pork and cut it into joints similar in appearance to pork loin. The taste of this pork is fantastic with just enough fat cover to baste the meat. John says, "I would rate this pork as my find of 2008 and would grace anyone's Christmas table."

Mettrick's source chicken from: Whitwams Farm - Robert Whitwam (near Huddersfield) - 19 miles from Glossop. As with all Mettrick's suppliers, animal welfare is top of the agenda for Robert Whitwam. Robert's chickens have natural daylight and much more room than RSPCA Freedom Foods stipulate for their birds. Robert has an abattoir on the farm so he has no need to transport his birds live, which we think is very important.
