A standing rib, or a 'joint of crop' as it is known accross the border in Yorkshire, makes a terrific centrepiece for a special occasion such as a dinner party or family get-together especially at Christmas. Cooking and serving. As a guide, a single rib will typically weigh a kilo (2lb) and serve 2-3 portions. So, for a joint, the maximum size would be four ribs. Typically, there is a little more fat within this joint, which some cooks prefer for added succulence. Our beef ribs are hung at least four weeks for that extra flavour.
