A firm family favourite for both oven & pot roasting. Primarily for roasting, can also be pot-roasted and boiled; this joint can used to make salt beef as a leaner alternative to brisket. Sometimes called the salmon cut due to the grain in the meat resembling salmon. Ideal for roast beef muffins as the size of the slice corresponds with the muffin.
